Soft and fluffy apple muffins
Serves: 16 to 18 muffins
Ingredients
4 cups peeled, diced (1/4inch) Granny Smith apples
1 cup sugar
2 large eggs, beaten lightly
1/2 cup oil
2 tsp. vanilla extract
1 cup light or whole buckwheat flour
1cup whole wheat flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 cup raisins
1 cup coarsely chopped walnuts
