Soups & Salads: Homemade Chicken Soup

Classic chicken soup with a twist

Serves: 8


6 cups chicken broth (canned or homemade)

1 medium carrot, thinly sliced

1 stalk celery thinly sliced

¼ cup kasha (medium granulation)

1 cup cooked chicken (optional)

2 tbsp. chopped parsley

1/8 tsp. pepper


Combine chicken broth, carrot, celery, and kasha in a saucepan. Heat to boil. Reduce heat and simmer about 15 minutes or until vegetables are tender. Add remaining ingredients. Heat to boiling and serve
